A true journey to discover the secrets of preparing typical Apulian dishes. Don an apron and bring your enthusiasm to learn what lies behind the authenticity and tradition of products such as fresh pasta and panzerotti.
Our cooking classes take place in the masseria’s orchard at 5:00 PM, subject to availability. When making your reservation, please choose from the following options:
*Cooking Class / Panzerotti
Rooted in ancient popular tradition, Apulian panzerotti, specifically from Bari, are a must of our culinary heritage. We will prepare them starting from pizza dough and enjoy rolling and filling them. Next, we will immerse them in extra virgin olive oil to savor them hot and crispy. The tasting will be accompanied by a glass of wine.
*Cooking Class / Fresh Pasta
Together we will create the most traditional pasta shapes of Apulian cuisine, starting with the Queen of our kitchen, the Orecchietta. At the end of the class, Madia will have the pleasure of offering you a tasting dressed with the flavors of our garden. The tasting will be accompanied by a glass of wine.
Class duration: 1 hour
*Slow Leavening Course: Focaccia without haste!
Led by contemporary baker Francesco Racanelli who, with his expertise and warmth, will take you by the hand and guide you through the secrets of slow leavening and the possible pairings between focaccia and the vegetables from our garden. The class will be followed by a convivial dinner where we will taste what we have prepared.

Class duration: 4 hours from 5:30 PM to 7:30 PM leavening course, from 8:00 PM to 9:30 PM convivial dinner
Booking and Cancellation Policy
Cooking classes can be booked with our staff subject to availability. For cancellations made less than 24 hours in advance, a charge equal to 100% of the price of the canceled service will apply. In case of no-show, the full amount of the selected class will be charged.
